2 ways to sharpen cutlery as sharp as new with sharpening stones and sharpening rods
Why is it necessary to sharpen a knife after a period of use?
During use, knives have to face many causes that cause them to become dull, such as:
- Soak in water for a long time.
- Stick to plastic and stick to dirt for a long time.
- After cutting acidic foods (such as lemons, tomatoes, etc.), do not wash the knife immediately.
- The handle is loose, the blade is bumped, and there is a lot of friction.
- Wipe the blade with hard paper, iron.
- Choosing the wrong cutting board (such as metal) can cause the knife to become blunt.
- Do not know how to preserve knives during hanging and storage.
Therefore, we need to sharpen the knife after use to ensure the sharpness of the tool when cutting and slicing food.
2 Two ways to sharpen knives
Sharpen knives with whetstones
To proceed with sharpening a knife with a whetstone, you perform 14 steps as follows:
Step 1: Prepare the knife sharpener.
You need to prepare 1 grinding stone (with 2 sides: 1 rough side and 1 smooth side) + 1 grinding rod (magnetic iron bar, with small grooves). Both of these tools you can find and buy anywhere at stores, markets, supermarkets, etc.
Step 2: Soak the grinding wheel in water.
When buying and before proceeding to sharpen the knife, you need to soak the whetstone in water until no air bubbles appear on the surface of the stone, about 15-20 minutes .
Step 3: Make sure the knife sharpening area is anti-slip.
You can line the bottom of the sharpening area with a towel or a silicone mesh , in general, any mats that help you prevent slipping during the sharpening process.
Step 4: Start sharpening the knife.
Sharpen the knife on the rough surface of the whetstone first (i.e. a low-grit surface). Many grindstones have a roughness that starts at F400 (European measure) or J1000 (Japanese measure).
Step 5: Sharpen the blade inclined 22 degrees.
Tilt the knife so that the blade makes an angle of about 22 degrees with the stone surface.
- To make a 22 degree angle, you need to position the blade perpendicular to the stone surface (ie 90 degrees). Then continue leaning to the left side by half 90 degrees, which is 45 degrees. Next, tilt the blade again to create an angle of about 22 degrees.
Step 6: Keep your hands in the correct position when sharpening the knife.
Hold the whetstone with one hand and hold the knife handle in the other hand so that your index finger rests on the top edge of the blade.
Step 7: Place your fingers on the side of the knife.
Extend your fingers over the back of the blade, applying moderate pressure so that the blade is rubbing against the surface of the whetstone. How can you flex your fingers to move the blade when sharpening.
Step 8: Move the sharpener on the stone smoothly.
Hold your hand and move the sharpener across the surface of the stone so that it is smooth and flowing, pushing the blade across the sharpening stone , like you are lightly cutting a piece of stone!
Step 9: Keep the grinding wheel moist.
When you feel the stone surface is dry, you need to wet the surface with a little water to make sure there are no problems during the sharpening process.
The stone surface is impregnated with water, which also helps you to remove some of the roughness of the stone that you have just sharpened before.
Step 10: Move the blade several times on the whetstone.
The operations to move the blade as instructed in the steps above, need to be repeated many times. At the same time, you need to adjust and move your finger accordingly.
Step 11: Proceed to sharpen the knife with the other side with the same operation.
After sharpening the blade on one side, you need to repeat the process to proceed to sharpen the blade on the other side .
Step 12: Proceed to sharpen the blade on the smooth surface of the sharpening stone.
At this point, you need to turn over the smooth surface of the sharpening stone, to proceed with sharpening the knife with the same steps above . Remember, continue to keep the stone wet during the sharpening process. At this point, you can use a damp cloth to wipe the stains on the knife.
Step 13: Cut the surface of the wooden cutting board.
It sounds strange! You use the blade to press against the surface of the wooden cutting board , as if you were trying to cut it . This step you only need to perform once for the purpose of cleaning the blade before finishing sharpening the knife.
Step 14: Forge the blade on the steel sharpening rod.
Finally, you need to bring the sharpening blade to the steel sharpening bar a few lines on each side of the knife, before you use the knife to cut food.
Sharpen knives with sharpening rods
To sharpen a knife with a sharpening rod, you need to follow the following 7-step process:
Step 1: Understand the difference between honing and sharpening.
First, you need to distinguish between operations: sharpening and sharpening. People use sharpening steel bar , to sharpen the blade before use and use it more often , called sharpening knife .
As for knife sharpening , you proceed on a sharpening stone , to fix the sharp edges of the blade and do not need to be done often.
Step 2: Place and hold the sharpening rod perpendicular to the surface.
Before proceeding to place and hold the sharpening rod perpendicular to the surface of the ground, you can cover it with a towel to secure it.
Step 3: Tilt the blade with the sharpener at a 45 degree angle.
To determine a 45 degree angle, you need to place the blade perpendicular to the sharpening bar, then continue to tilt it halfway up 90 degrees, to get 45 degrees.
Step 4: Rotate the blade towards the bar to create an angle of about 20 – 23 degrees.
After determining the 45 degree angle, you continue to rotate the blade towards the sharpening rod to get an angle of about 20 – 23 degrees.
Step 5: Pull the blade towards you.
Holding the blade at a 20-degree angle, you draw the blade toward you in a straight line. Just do this about 5 times for regular sharpening, or 8-10 times if you haven't sharpened it for a long time.
Step 6: Repeat the process with the other blade side.
You proceed to sharpen the knife with the other side with the same step.
Step 7: Replace the sharpening rod (if it is blunt).
When conducting knife sharpening on the sharpening rod, if the grooved surface on the steel bar is no longer helpful for sharpening (that is, they look smooth, do not create friction on the blade), then when you should replace the sharpening rod with a new one.
3 Simple ways to repair chipped and distorted knives
To fix chipped, or distorted knife letters, you can perform these 5 simple steps:
Step 1: Soak the whetstone in water.
Before proceeding to sharpen chipped or distorted knives, you need to soak the whetstones in water for about 15 minutes, before placing them on the cloth.
Step 2: Sharpen the knife on the rough surface of the whetstone.
Choose the rough side of the whetstone so you can start sharpening the knife.
Step 3: Move the blade on the whetstone.
Run the tip of the knife horizontally across the rough stone to sharpen it. Only move to sharpen the tip of the blade.
Step 4: Kick the tip of the blade back and forth on the stone surface.
You continue to kick (move up and down several times) the tip of the blade on the stone surface, to round out the edge. Run it vertically, like you're cutting it! Don't forget to keep the grinding wheel wet during the process.
Step 5: Re-sharpen the entire blade.
After correcting the dull, chipped blade tip, then proceed to sharpen the entire blade (following the same steps in part 1).
With the above tips, hope to help you overcome the situation of dull knives. Now, sharpening sharp cutlery is no longer so difficult! You can do it at home by sharpening your knives with a sharpening stone and sharpening rod.
