Step 1: The cooled rice needs to be sun-dried to dry and firm.

Step 2: You need to heat the oil lightly, fry the rice until golden and crispy, then remove it to drain the oil. Do it gradually so that the rice can be evenly popped and easier to handle without burning.

Step 3: Next, put it in a hot pan, stir well. Pour in the pre-mixed mixture (add more or less depending on whether you like it less salty or more salty), stir well until the fish sauce, garlic and rice blend together. Until the rice is evenly absorbed by the other seasonings.

Step 4: Turn off the stove and let the rice cool completely before putting it in a box or jar to keep it crispy. This dish is good as a snack or as an accompaniment to beer. This burnt rice dish is truly a specialty of many regions such as Ninh Binh. When you make your own burnt rice, it will be incredibly fragrant and delicious, just like outside restaurants. For sure, next time you will want to cook more leftover rice to be able to make this burnt rice dish by yourself.

Note: To ensure the delicious and high-quality burnt rice without being invaded by bacteria that can harm your health, after eating the rice, you should dry it in the sun or dry it immediately in the microwave or oven. This way, the rice will not undergo fermentation due to oxidation and there will be no bacteria attacking and harming your health.
